Ingredients
- 2 cups Puttu flour
- ¼ tsp Salt
- ¼ cup Water (plus more as needed)
- Fresh grated coconut (as required, for layering)
Preparation
1. In a large bowl, add the puttu flour and salt. Mix well.
2. Sprinkle ¼ cup water over the flour and gently crumble it using your fingers.
3. Add more water little by little and mix with your fingertips until the flour becomes moist and crumbly.
4. The flour should hold its shape when pressed in your fist and break apart easily when pressed again.
5. Break any lumps using your fingers. (Alternatively, pulse the mixture 2 times in a mixer to get an even crumbly texture.)
6. Take the puttu steamer (puttu kutty) and add 2 tablespoons of grated coconut at the bottom.
7. Layer with 3 tablespoons of prepared puttu flour.
8. Repeat the layering with coconut and flour until filled, finishing with a layer of coconut on top.
9. Close the puttu kutty and steam for about 5 minutes, or until steam escapes from the top holes.
10. Carefully open the steamer and gently push out the puttu using a wooden ladle from the back.

Serve hot Kerala puttu with Egg Curry 🙂
